3 easy recipes to help clean out your fridge of leftovers

Ham and cheese quiche

This is a great recipe to use up the ham and cheese left in your fridge.
You can use whatever type of cheese you have at hand, and substitute the ham with bacon, sausage, a combination of veggies or whatever you have leftover.
Let’s start!

Ingredients

  • 1 shortcrust pastry
  • 100 gr of cubed or sliced ham
  • 200 gr of grated soft cheese
  • 4 tablespoons of grated Parmesan
  • 2 eggs
  • 200 ml of cream
  • salt and pepper

Instructions

  1. Preheat the oven at 180°, roll out the shortcrust and put it on a baking sheet covered with baking paper.
  2. In a medium bowl, beat the eggs, the cream, the cheese and the Parmesan. Add the salt and pepper and stir well.
  3. Add the cubed ham (or the sliced ham cut into rough pieces).
  4. Stir and pour the mix on the baking sheet.
  5. Place it in the oven and let it cook for 30/40 minutes at 200°

Vegetable meatloaf

This is a tasty alternative to the classic meatloaf. Made with vegetables, it is also a great solution for those who do not love or eat meat.

Ingredients

  • 500 gr of potatoes
  • 2 carrots
  • 2 courgettes
  • 1 egg
  • 100 gr of breadcrumbs
  • 50 gr of Parmesan
  • Extra virgin Olive oil
  • Salt
  • cheese or/and ham to taste for the filling

Instructions

  1. Boil the potatoes.
  2. Use another pan to boil the carrots and the courgettes.
  3. When the vegetables are ready, put them in a bowl and blend.
  4. Add the egg, the breadcrumbs, the Parmesan and the salt.
  5. Put the mix on the baking paper sprinkled with breadcrumbs.
  6. With slightly wet hands, form a circle with the mix and add the cheese or the ham in the center.
  7. With the help of the baking paper, roll up the meatloaf, then slightly open the paper to pour the Extra virgin Olive oil, then seal it.
  8. Cook at 200° for about 35 minutes.

Ingredients

  • 350 gr of Spaghetti (or another pasta type)
  • 5 eggs
  • 100 gr of milk
  • 100 gr of Scamorza cheese
  • 50 gr of grated Parmesan
  • 50 gr of bacon
  • black pepper
  • 1 garlic clove
  • thyme
  • Extra virgin Olive oil

Instructions

  1. In a medium bowl add the eggs, the thyme and the milk. Then salt, pepper, grated Scamorza and Parmesan and stir everything.
  2. Add your leftover pasta and mix again.
  3. In a large frying pan, brown the garlic.
  4. Remove the garlic, pour the pasta into the pan and spread it out.
  5. Cook over high heat for 1 minute, then lower the flame. Cover with a lid and let it cook for 15 minutes.
  6. Use a large plate to flip it and cook for 5 minutes more without the lid.
