Quinoa and Bulgur salad

A super easy vegetarian recipe, ideal for all those who love quinoa and bulgur.
Tasty, nutritious and very easy to digest, this is a great choice for your office lunch.

Ingredients
● 100g Bulgur
● 100g Quinoa
● 70g Peppers
● 70g Courgettes
● 50g Cherry Tomatoes
● Extra Virgin Olive Oil to taste
● Salt to taste
● 100ml water

Instructions

1. Wash the cherry tomatoes and cut them into cubes.
2. Wash all the vegetables.
3. Cut peppers and courgettes into strips.
4. Put all the ingredients into a bowl and mix.
5. Put the bowl in the microwave and cook at 750W for 11 minutes.

Salmon Muffins with Turmeric

Muffins are not just for the sweet-toothed. Try our savoury version, which is a perfect idea for anytime snacks.

● 200g Salmon
● 20g Turmeric
● 500g Flour
● 15g Yeast
● 3 Eggs
● 25ml Extra Virgin Olive Oil
● 20g Salt

Instructions

1. Chop the salmon with a knife.
2. Make a dough with flour, eggs, yeast, chopped salmon, turmeric and salt.
3. Place the dough in some muffin molds.
4. Cook at 750W for 8 minutes.

Mille-feuille made with omelette and courgettes

Mille-feuille omelette in the style of a mille-feuille pastry. If you love eggs and courgettes, this recipe is made for you! Bring it to the office and be the envy of your coworkers!

Ingredients

● 8 Eggs
● 30ml Milk
● 150g Courgettes
● 30g Grated Parmesan
● Salt to taste
● Eztra Virgin Olive Oil to taste
● Pepper to taste

Instructions

1. Grate the courgettes (not too thin)
2. Beat the eggs with milk, Parmesan cheese, salt, oil, pepper and grated courgettes
3. Put the eggs in a baking dish and insert the bowl in a microwave
4. Start cooking at 650W for 7 minutes

Chickpea and vegetable balls

Vegetarians don’t need to miss out on meatballs! Try our new recipe, where chickpeas, courgettes and aubergines are undisputed stars.

Ingredients

● 300g Chickpeas Boiled
● 100g Courgettes
● 100g Aubergines
● Extra Virgin Olive Oil to taste
● Salt to taste
● Parsley to taste
● 2 Eggs
● 300g Quinoa

Instructions

1. Cut the aubergines and the courgettes into little cubes.
2. Blend the chickpeas with oil, salt, pepper, eggs and parsley.
3. Mix the blend with aubergines and courgettes and make a dough.
4. Make little meatballs and put them on a plate.
5. Insert in the microwave and start cooking at 750W for 6 minutes.
